Easiest veggie recipe for a quick weeknight side:
2-3 Zucchinies- cut into 3rd's then of those, cut into 4th's. You'll have what looks like small sticks of zucchini left.
One container of cherry tomatoes cut in half.
Half of a container of diced mushrooms (I still rip mine apart).
1/2 Red Onion diced.
*Remember to wash your veggies before cutting*
Toss everything into your pan- set cook top on med-high & let saute for a few minutes with butter.
Add: salt, pepper, garlic powder, smoked paprika, onion powder, and any other seasonings your family loves!
I let my veggies cook for a few minutes until soft, while stirring occasionally. This doesn't need yo be watched with a Hawk's Eye.
